Sweeten Your Day

There are several types of sweeteners on the market today and I think I have tried them all.  The newest one, Nectresse,  is the only  100% natural sweetener made from Monk fruit extract.  I didn’t know what Monk fruit was so I looked it up and found it is a small gourd like fruit which is exceedingly sweet.  This fruit is raised in central Asia and while it has been around for centuries it is just now getting the attention it deserves.

All of the apple orchards in our area are being picked now so apples of all kinds are in great abundance.  My family loves Apple pie so I decided to use the recipe I found on www.nutresse.com for apple-cranberry pie.  Here is the recipe: (Preheat oven to 375 degrees)  In a medium sized pot or pan combine ½ cup fresh cranberries (I used one cup dried), 2 tablespoons apple cider or apple juice, 2 teaspoons apple pie spice, 1 tablespoon fresh lemon juice, 1/4 teaspoon salt and 36 NECTRESSE Natural No Calorie sweetener packets. Bring pot to a simmer and cook for 4-5 minutes. Remove from heat and allow to cool for five minutes. Peel and slice two pounds of apples; place in a large bowl; pour cranberry mixture on top of the apples; add one teaspoon of vanilla and 2 tablespoons of corn starch. Stir and toss to mix all ingredients well. Use  two of your own pie crusts or purchase refrigerated pie crusts at the store. Pour ingredients into unbaked pie crust, top with second crust; cut slits in top. Bake for 60-70 minutes.  Serve warm with whipped cream or ice cream.  I served our pie plain, and it was just delicious.  Try it!
