Back on track

The other day I felt like getting back to cooking and baking mode so I made this delicious taco pie.  I got the recipe from Food Network Magazine (my Mother-in-law treated us to the subscription). Isn’t that nice? Well, the food was good and light.  It was also easy to prepare.  If you try to avoid gluten foods this would be a nice recipe for you.  I served it with green salad. Hubby just loved it!
