All of the apple orchards in our area are being picked now so apples of all kinds are in great abundance.  My family loves Apple pie so I decided to use the recipe I found on www.nutresse.com for apple-cranberry pie.  Here is the recipe: (Preheat oven to 375 degrees)  In a medium sized pot or pan combine ½ cup fresh cranberries (I used one cup dried), 2 tablespoons apple cider or apple juice, 2 teaspoons apple pie spice, 1 tablespoon fresh lemon juice, 1/4 teaspoon salt and 36 NECTRESSE Natural No Calorie sweetener packets. Bring pot to a simmer and cook for 4-5 minutes. Remove from heat and allow to cool for five minutes. Peel and slice two pounds of apples; place in a large bowl; pour cranberry mixture on top of the apples; add one teaspoon of vanilla and 2 tablespoons of corn starch. Stir and toss to mix all ingredients well. Use  two of your own pie crusts or purchase refrigerated pie crusts at the store. Pour ingredients into unbaked pie crust, top with second crust; cut slits in top. Bake for 60-70 minutes.  Serve warm with whipped cream or ice cream.  I served our pie plain, and it was just delicious.  Try it!

Once upon a time, (that's how all stories start, you know) in a land far away, lived a little girl who wanted to be a princess more than anything in the world. Down deep in her heart, she knew it was not possible to be a princess because her parents were not a king and queen.   

So she soon grew to be a young woman and decided if she couldn't be a princess, maybe she could be a "Cinderella" and wish for a Prince Charming to whisk her away.  She wished and wished and nothing happened.  Then she decided she would pray about it instead and just maybe that would work better. Nothing happened for a very long time.  Just as she was about ready to give up, Prince Charming showed up on her computer connection at an internet cafe.   

One thing led to another.  Prince Charming did indeed take her away to a far off place.  Now Prince Charming and Princess Charming are living happily ever after.  The moral of the story is that you can be whatever you want to be.  Just dream on and make it happen!

Vacation Home

There’s really something to be said for buying a vacation home. My husband and I thought about it for the longest time and weighed the pros and cons over and over again and decided at the end of the day it just didn’t make sense to keep throwing good money away on hotels season after season, you know? The kids were in on the whole thing and we all went house hunting together (my sister’s a realtor so that made it much easier.) There are actually quite a few great beach towns here in Texas which a lot of people don’t realize but we decided on a craftsman style bungalow only about three miles from the beach. It’s the cutest little house – purple with a red door – but it needs a small bit of “upgrading” as my husband calls it. 

I thought that was the best idea since that way we could put money into it now and sell it for more later. Beach property never really goes down in value, you know? So anyway, we’ve been working on getting it ready for us to come down in a couple of weeks and actually bring friends to show it off. We got cable installed and I’ve been researching things like the rates on www.ElectricCompaniesTexas.net and whether or not we want to put new sod down in the front. My husband is actually the one who loves decorating so he’s been online all day since we bought the place looking at patio furniture and paint colors and whatnot and I know he’s excited about all of us going down there and really making the place our own. 

It’s going to be great to have a vacation home that we can leave clothes and sunscreen in but we need to eventually decide whether or not we’re going to rent it out when we’re not there. I’d like to avoid it so we can leave all our stuff out but it sure would help with the second mortgage we’ve taken on!

A sudden career change has our family in an uproar.  We live in a little farm town in Texas but my hubby has been working in Dallas.  Our acreage has allowed us to have horses and all of us ride almost every day.  Now the moving van is taking us to New York City of all places.  I don’t know if this horse minded farm girl will do well in the big city!

As soon as we get settled I am going to start looking for a NYC saddlery review who may be able to help me find an English Equestrian riding school for the kids. .  Not sure how well they will like it, but we will just have to see.  They’ve been on horses since they were toddlers so hopefully that will help them to do well.  I was amazed (and fortunate) to have found the Manhattan Saddlery right in the heart of New York City.  They are the only Tack Shop in New York City, but that is not all they sell.

One could see they had the finest array of Equestrian apparel in New York City.  Also, moms can get free shipping. Boo hoo.  I’m going to miss this TV show.  I watched the finale last night and was holding my breath wondering what would happen with the spin-off, Major Crimes.  I expected Brenda’s detectives to be pretty harsh with Captain Rayder and they were.  Now to see if the writer’s can come up with something better than disgruntled detectives.

To understand what jungian therapists do, we must first know that Swiss psychiatrist C. G. Jung opened the door to a more comprehensive understanding of ourselves.  Basic to all of us - the things in our lives we think of as being “normal” - mom, dad, birth, childhood, friendships, love marriage, religion and death make us all human.  Sometimes, though, life unfolds with discord, almost too much to handle. 

Sometimes that discord is so great we must seek help and the best help may very well come from having a jungian analysis done by trained Jungian therapists. In order to give and get good responses to our need for help, one needs a positive relationship with the therapist who will help us come to terms with the events or crises of our daily life, which may reveal where we have lost touch with ourselves.  Generally, our inner self already knows part of what’s wrong and the therapist is there to help draw out the things we don’t really want to talk about.
